A ‘sweet story’: One More Bite Bakery spreads homemade joy in North Bay

Courtney Audette is sprinkling sweetness across northern Ontario, one bite at a time.

As the owner of One More Bite Bakery, Audette is officially making North Bay her new baking headquarters, marking an exciting chapter for the homegrown bakery.

Originally from Sudbury, Audette has already earned herself a “sweet” reputation for creating mouthwatering cakes, macarons, and bite-sized treats that keep her fans coming back for more.

Now, with orders piling up, she’s bringing her signature creations to the Gateway City of the North.

“It just felt like the perfect next step for us,” Audette shared.

But her delicious journey started long before One More Bite Bakery was born.

After graduating high school in 2009, Audette followed her culinary dreams into Cambrian College’s chef training program, imagining herself one day running her own restaurant. Life had other plans, though, and after a few twists, turns, and one global pandemic, she found herself at home, baking up something special for her son’s birthday.

That little personal project quickly snowballed into something much bigger, and much sweeter.

“It kind of took on a life of its own,” Audette laughed, saying how friends and family started requesting treats for birthdays, parties, and gatherings.

“With everything going on, baking brought me so much happiness again.”

And she hasn’t slowed down since.

Bringing the Sweetness to North Bay

As she gets comfortable with her business in North Bay, Audette is bringing her most-loved treats to a whole new crowd of sweets fans, including her famously perfect macarons.

These delicate almond meringue cookies, with their light-as-air shells and endless filling possibilities, have become a fan favourite — and Audette’s personal specialty.

“They’re definitely a challenge, but when they turn out just right, it’s beyond satisfying,” she said.

Of course, the move didn’t come without its hurdles. With an already booming business, Audette is juggling a steady stream of orders — especially during what’s shaping up to be her busiest wedding season yet in 2024 — all while handling the baking and deliveries herself.

“It’s a lot, but I wouldn’t have it any other way,” Audette said. “I love being part of people’s special celebrations.”

What’s Her Secret?

So what makes One More Bite Bakery treats extra special? Audette says it’s all about the personal touches.

Whether it’s hand-piping company logos onto cakes or crafting intricate fondant sculptures, every creation is made with care — and a dash of fun!

“I love adding little details that make each order unique,” she said. “It’s a lot of work, but I really enjoy it.”

And when it comes to ingredients, Audette is serious about quality.

“There’s just no comparison,” she explained. “You can taste the difference when you’re using fresh, homemade buttercream instead of something mass-produced.”

She’s also passionate about keeping things local, sourcing ingredients from nearby farmers and markets whenever possible.

“The flavour is unbeatable when it’s fresh and local,” Audette added.

To celebrate her North Bay debut, Audette is also introducing some new, creative treats to the menu — like sourdough chocolate chip cookies and sweet focaccia in fun flavours like toasted coconut and white chocolate or strawberry jam donut.

“The sourdough chocolate chip cookies are next-level — chewy, with just the right amount of sea salt,” she said. “And the sweet focaccia has been welcomed by everyone’s tummies!”

Looking Ahead

As One More Bite Bakery continues to grow, Audette has big plans for the future, including a dream of opening her very own storefront in North Bay.

“I love the idea of having a little spot where people can come in, grab a coffee, and pick up their favourite treats,” she shared. “But that’s a little ways down the road.”

For now, she’s focused on keeping the business close to home and making sure every treat that leaves her kitchen is made with love.
